Tasting notes: a refined and elegant oil, never aggressive; one of the most “gentle” among Tuscan olive oils. It features an interesting profile of freshly cut grass, olive leaf, radicchio, and fresh arugula. Light hints of green apple, aromatic herbs (thyme, rosemary), and a very delicate floral note.
Pairings: A smooth and delicate oil, ideal for fish dishes, boiled vegetables, salads, and cheeses.
Production cycle: Alfa Laval X7 continuous 3-phase cycle with paste cooling, cardboard filtration, stainless steel storage, with argon top-up at a constant controlled temperature of 18 degrees Celsius.
