The Frantoio del Monte Pisano offers a wide range of services tailored to olive growers and enthusiasts seeking high-quality extra virgin olive oil. The ongoing revitalisation of this facility, including an overall renovation of its spaces and machinery, underscores a steadfast dedication to enriching the local landscape for the community’s benefit. Through the promotion of olive culture and local excellence, we strive to uphold our commitment to enhancing the region’s vitality.

Third-party oil production

The mill offers specialised services which begin with the delivery of olives by growers and culminate in the production of extra virgin olive oil. To revitalise the historic “Caprona Olive Mill” and restore it to its former glory, a comprehensive refurbishment of the entire production facility was undertaken. Under the new management, significant improvements have been implemented, both in terms of machinery and the entire production line. Below is a list of all the services offered for third-party oil production.

  • Olive pressing
    Processing begins with the mechanical milling of the olives, followed by oil extraction, subsequent decanting and filtration. The mill utilizes cutting-edge cooling systems to chill the olive paste before grinding, ensuring optimal conditions. The duration of the process varies depending on the desired end product.
  • Storage and preservation
    After pressing, the oil is stored in dedicated tanks designed to ensure optimal temperature and light conditions, preserving its quality and sensory characteristics. As an optional service, clients can request the use of specific stainless steel tanks under nitrogen or argon.
  • Bottling and labelling
    Our bottling line is designed to ensure maximum hygiene and adequate preservation of the oil’s properties. The service also includes labelling and, if requested, customized packaging according to client specifications.

Procurement of raw materials and in-house production

Among the key objectives of the new olive mill, the production of branded olive oil emerges prominently – cultivated and processed with utmost respect for the environment and sustainability, with the intention of becoming a representative ‘Protected Geographical Indication’ (IGP) product of Monte Pisano.

To achieve this goal, the mill will purchase high-quality olives harvested during the optimum ripening period (late September to mid-October) and grown within the local territory (municipalities of Monte Pisano and surrounding areas).

The raw material will be acquired at favourable prices for local olive growers, aiming to assist agricultural companies and local producers in finding a market outlet without having to undertake the laborious processes of transformation and sale.

Training and courses for professional operators

During months that do not fall within the pressing season, the company will organise educational events, conferences, and professional courses. These events are specifically designed for disseminating cutting-edge techniques and best practices, aimed at increasing the number of specialised operators in the region and supporting the work of olive growers who aim to produce high-quality, genuine, and environmentally respectful products.

Training and refresher courses will cover topics ranging from olive grove reform and pruning to soil management and nutrition, from plant fertilization to defence against major diseases. Additionally, courses on tasting and sensory evaluation techniques will be organized.

Beyond olive oil: culture, community, value creation

Frantoio del Monte Pisano aims to become a new focal point for the community. The mill will offer:

  • Guided tours to discover more about olive oil production processes, from olive harvesting to pressing
  • Tastings and workshops, occasions to meet up, learn the art of tasting extra virgin olive oil and uncover its secrets
  • Cultural events, conferences, themed days, meetings with industry experts dedicated to olive cultivation, nature, and sustainability.
