Opening of Monte Pisano Oil Mill: Workshop, Production Line Tour and Aperitif Dinner with Show – September 7, 2024

On Saturday, September 7, the Monte Pisano Oil Mill inaugurates the 2024/2025 season with a day full of events. This is the first in a series of events that will characterize the mill’s new direction, an opportunity to come together before the olive pressing season.

Program of the Day

10:00 AM – 12:30 PM <> Workshop: Quality and Value of Olive Oil

  • “Sensors and non-destructive analytics for monitoring oil olive ripening and evaluating their technical quality” – Prof. Andrea Bellincontro (University of Tuscia)
    The quality of an “oil olive and the commercial characteristics of the” oil that can be derived from it are strongly influenced by its ripening and the “identification of its most appropriate harvest time. The” oil produced will benefit from this choice, and consequently, so will the quality and commercial value of the oil itself.
    The “opportunity to make consistent choices in” identifying the most favorable moments for harvesting is, however, significantly affected by the evident effects of ongoing climate change that strongly influence production and yields.
    In this general framework, the use of non-destructive analytical technologies, based on sensor approaches, becomes a quickly implementable solution and an agile and reactive decision-making tool.
    Among the widely tested technologies on olives, olive pastes, and oils, we find near-infrared vibrational spectroscopy (NIR) and the use of artificial noses (E-noses), based on sensors capable of detecting aromatic and olfactory fingerprints.
  • “High-quality Italian extra virgin olive oil between product differentiation and process innovation” – Prof. Maurizio Servili (Full Professor of Food Science and Technology, Department of Agricultural, Food and Environmental Sciences (DSA3) University of Perugia, Via San Costanzo, snc. Perugia.)
    The world of olive oils must address strategic issues related to production and product enhancement, and in addressing this issue, we must always keep in mind the current motivations for consuming extra virgin olive oil.
    Production costs, Mediterranean tradition, sensory properties, and health expectations become the factors that largely differentiate and bring value to olive oil and must therefore be well considered in every aspect of product production, communication, and sales.
    The “presentation aims to explore these topics in depth, including how to work extensively on product differentiation and” process innovation.

6:00 PM <> Inauguration and Ribbon Cutting

Inauguration ceremony and ribbon cutting in the presence of authorities.

7:00 PM – 8:30 PM <> Aperitif Dinner

A gastronomic event that highlights the strong synergy between the oil mill and local businesses, while also serving as an opportunity for mutual acquaintance before the evening concert.

9:00 PM – 10:30 PM <> Alter Echo String Quartet Concert

The Quartet, established in 2011, offers the classic chamber ensemble format par excellence in service of pop music, becoming a crossover reference point in the Italian music scene.

They collaborate and have collaborated with great artists such as: Andrea Bocelli, Pooh, Elodie, Mario Biondi, Roby Fachinetti, Francesco Baccini, Il Volo, Raphael Gualazzi, PFM, Gigi Proietti, Andrea Griminelli and many others.

They have been conducted by A. Morricone and were guests of honor at events for Dolce&Gabbana, Gucci Italia, Bulgari, Porsche, Mercedes, and TIM commercials.
