A sensory journey into the heart of extra virgin olive oil: from field to table, discovering its secrets and developing oil tasting skills.

First Meeting: the Art of EVO Oil Tasting

Date: May 7, 2025, from 5:00 PM to 8:00 PM
In this first meeting, we’ll open the doors to a fascinating world: the world of extra virgin olive oil. You’ll learn to recognize the positive and negative attributes of oil according to the C.O.I. (Italian Olive Oil Consortium) method. We’ll guide you through tasting trials to distinguish different perceptions in “smell and taste, the nuances of aromas and flavors”.

Objectives:
• Learn tasting techniques.
• Recognize the distinctive qualities of EVO oil.
• Develop sensory sensitivity during the tasting experience.

Second Meeting: the Olive Oil Supply Chain and its Impact on the Product

Date: May 8, 2025, from 5:00 PM to 8:00 PM
How is quality extra virgin olive oil created? In this meeting, we’ll explore the journey from olive grove to oil mill. We’ll discover how harvesting, processing, and storage phases influence the sensory characteristics of the final product. It will be a unique opportunity to learn about processing techniques and the choices that make the difference between ordinary and high-quality oil. And, of course, we’ll conclude with new tasting trials to put what we’ve learned into practice.

Objectives:
• Understand the fundamental phases of the olive oil supply chain.
• Learn about technical choices that influence oil characteristics.
• Refine your palate with targeted and conscious tastings.

Third Meeting: Regulations, Labeling, and Food Pairings

Date: May 9, from 5:00 PM to 8:00 PM
In this meeting, we’ll explore the world of extra virgin olive oil marketing, focusing on labeling regulations and the importance of Tuscan PDO and PGI certifications. We’ll conclude the course with a buffet where the tasted oils will be paired with gourmet dishes to understand how oil enriches and enhances food flavors. A perfect opportunity to share experiences and consolidate knowledge in a convivial atmosphere.

Objectives:
• Learn about main labeling regulations and PDO and PGI certifications.
• Discover how to choose “the right oil for each dish.
• Enjoy a buffet combining the best of” local oil and gastronomy.
