March 1-2, 2025 – Frantoio Del Monte Pisano, Loc. Caprona, Vicopisano (PI) and Azienda Agricola Podere Del Pari, Calci (PI)
The course, aimed at technicians and industry operators, provides updates on cultivation techniques to improve both quantity and quality of olive production.
Specifically, it aims to enhance professional skills in pruning young trees (training pruning), properly structured mature trees (production pruning), and overgrown trees and/or those requiring structural simplification for more economical pruning and harvesting operations (reformation pruning).
All operations will be performed from the ground (without ladders) using telescopic equipment, either manual or electric.
Our course is structured over two days during which the following topics will be covered:
- Planning and implementation of new olive orchards.
- Sustainable soil management.
- Olive tree management (pruning, treatments, and general agronomic practices).
- Four hours of classroom instruction at Frantoio del Monte Pisano and ten hours in the olive grove.
The course will be taught by Matteo Kovatz, master pruner and deputy EVO panel leader at CCIAA Pisa.
Practical exercises are included, during which participants can practice working in groups under the instructor’s guidance.

Costs
- €120 course only
- €160 course, mid-morning coffee break and lunches with the following menu:
— Saturday: eggplant, smoked scamorza and sun-dried tomato bruschetta, farro soup, water, wine and coffee
— Sunday: pumpkin and taleggio bruschetta, mild mustard chicken bites with basmati rice, water, wine and coffee
