Place it in a bowl and wet it with cold water and vinegar (don&#8217;t soak it, it should just soften). After 10 minutes, squeeze it well with your hands, crumbling it into a large bowl.  <\/p><\/li><li data-start=\"532\" data-end=\"776\"><p data-start=\"535\" data-end=\"776\">Slice the onion thinly and, if you want to soften its flavor, soak it in cold water with a bit of vinegar for 10 minutes.<\/p><\/li><li data-start=\"532\" data-end=\"776\"><p data-start=\"535\" data-end=\"776\">Peel and slice the cucumber into rounds. Now cut the tomatoes into cubes, keeping their juice. Add the vegetables to the crumbled bread, tear the basil with your hands, add a generous drizzle of \u201coil, a tablespoon of vinegar, salt and pepper. Keep some beans whole and pass the remaining through a food mill to create the creamy base for the soup. <\/p><\/li><li data-start=\"1178\" data-end=\"1367\"><p data-start=\"1181\" data-end=\"1367\"><strong data-start=\"1181\" data-end=\"1206\">Initial Saut\u00e9<\/strong><br data-start=\"1206\" data-end=\"1209\">In a large pot, preferably earthenware, saut\u00e9 the chopped onion, carrot, and celery with plenty of oil. Add the peeled and chopped tomatoes. <\/p><\/li><li data-start=\"1369\" data-end=\"1497\"><p data-start=\"1372\" data-end=\"1497\"><strong data-start=\"1372\" data-end=\"1386\">The Vegetables<\/strong><br data-start=\"1386\" data-end=\"1389\">Cut the black kale, savoy cabbage, potatoes, and zucchini into small pieces. Add them to the saut\u00e9ed mixture and let them flavor well. <\/p><\/li><li data-start=\"1499\" data-end=\"1713\"><p data-start=\"1502\" data-end=\"1713\"><strong data-start=\"1502\" data-end=\"1512\">Cooking<\/strong><br data-start=\"1512\" data-end=\"1515\">Pour in the \u201cbean cooking water (plenty, it should cover everything) and cook on low heat for at least <strong data-start=\"1628\" data-end=\"1646\">one and a half hours<\/strong>\u201d. Halfway through cooking, add the whole beans and the bean cream. <\/p><\/li><li data-start=\"1715\" data-end=\"1949\"><p data-start=\"1718\" data-end=\"1949\"><strong data-start=\"1718\" data-end=\"1726\">Bread<\/strong><br data-start=\"1726\" data-end=\"1729\">Place slices of stale bread at the bottom of a soup tureen, pour the hot soup over it, and continue layering bread and soup.
