On Wednesday, July 24, 2024, the public presentation of the new Frantoio del Monte Pisano took place.
The event, open to all, was attended by Matteo Ferrucci and Massimiliano Ghimenti, Mayors of Vicopisano and Calci respectively, who opened the meeting by emphasizing the importance of this new venture for local communities.

Our Objectives

Frantoio del Monte Pisano will support small producers in olive grove management through the development of a service center for olive growers, training and refresher courses, a local agricultural products shop, and guided tours with olive oil tastings.

The production involves the “use of state-of-the-art machinery”, designed and optimized to ensure the best possible service to olive growers and maximum final product quality.
The 4.0 machinery line implemented in the oil mill allows data collection on various processing stages, from when the “olive enters the mill until the” oil exits the decanter, thus optimizing the raw material throughout all processing phases and associating a “digital passport” with each pressing.
The process is completed by vertical separation, a fundamental phase to reduce water and impurities, followed by two optional services for maximum quality and longevity of EVO oil: cardboard filtration and oil storage in inert tanks with argon to prevent product oxidation.

“The goal is to create an environmentally friendly process, ensuring the best processing conditions to revitalize the local economy, particularly the olive-oil sector.
We want to be ready for the next season to maintain the high quality standards that we have set as a priority for ourselves and for Monte Pisano.”
